Appearance: Beige, compact, fine and persistent head; dark amber colour with ruby glints, sometimes there is a yeast cloud; fine effervescence.
Bouquet: Cured and caramelised, with herbaceous hints and a slight acidity due to the burnt caramel malt.
Flavour: The caramel malts offset the slight acidity imparted by the roasted malt and the bitterness of the hop (Admiral variety). Full-bodied beer.
Excellent with: Game such as pigeon, hare, venison, wild boar.
