Elongated and irregular triangular-shaped meat piece that is taken from the inner top end of the loin, close to the shoulder bone in the Iberico pig. Protected by a layer of fat from the loin, it has a tender texture and a savory taste due to its marbled infiltrated fat.

Montenevado’s 100% Iberico Natural range-fed pigs are raised on a diet of acorns, grass and cereals in their own meadows in the southwest region of Spain during twice the minimum recommended time stipulated in the “Iberico Regulation (2014)”.
