The wheels of the Ubriaco riserva undergo a similar aging treatment as the Ubriaco Rosso Piave. For the di.vino there is a further process, the wheels have seepages of wine, which give the dough a unique look and taste and make it denser, as well as preserving the typical compactness of the Ubriaco cheese.

It is a whole cow’s milk (and goat lipase), matured 3 months with wheels which are of 2.5kgs in weight.

Thanks to its flavor, particularly emphasized by the seepages of wine, it is a cheese with an irrepressible personality, which makes it possible to enjoy it even without accompaniment as a main dish.
