The acclaimed acorn-fed 100% Iberico ham from the 2014 vintage, ranked as the best of the century. The large amount of acorn and the favorable temperatures of the 2013-14 montanera (with abundant and widely distributed rains) allowed the curing of these 100% Iberian acorn, up to 60 months - instead of the usual 30-40 - from purebred animals. In this way, our ham masters were able to make an extraordinary ham for its unique aroma and flavor.
The Special Edition: presented in an elegant container with the ham wrapped in silky and mesh paper, includes a ham knife and professional tongs to facilitate knife cutting and plating; with a detailed brochure on breeding and curing this authentic gourmet delicacy.
Tasting Notes: Intense and very long aroma, due to the very high abundance and very good quality of the acorn throughout the season. Outstanding color intensity, with great maturity in the meat. Pink nuances of lean muscle fibers from long-term healing, with soft, creamy and very juicy meat in the ham that melts on the fingers, with little fibrosity, and firmer consistency at the tip and knuckle of the ham . Very intense flavor, little salty, with resonances of dried fruits, sweet notes of acorn starch, and an outcrop of umami flavor.
