A hard cheese that is left to age for about a year and a half. The wheels are then wrapped in chestnut leaves which transform them and enrich them with a strong, exceptional flavour.
Raw material: Sheep and cow's milk
Taste: Sweet and umami with slightly herbaceous undergrowth notes
Serving Suggestion: Incredible when served pure on the cheese board. Pairs well with Tenuta San Pietro Gavi or 32 Via Dei Birrai Atra craft beer
